sauteed onions and mushrooms
an easy side with the grilled chicken we made last night. very easy, and so quick. amounts are approximate, because you really just throw it all together!
I N G R E D I E N T S :
1 onion, sliced and cut in half
1 small container whole mushrooms, stems removed
1 small clove garlic minced, or 1/2 tsp. minced garlic
canola/vegetable oil
dash of salt
1 Tbsp. butter
splash of sherry cooking wine (maybe about 1 Tbsp?)
splash of lemon juice
D I R E C T I O N S :
in a small pan, saute onions and garlic in oil on medium-high heat until onions are translucent and softened a bit. once the onions are almost completely done cooking, add in the butter and mushrooms. saute for a few minutes until mushrooms are nearly done cooking. add wine and lemon juice and cook until liquid is reduced and onions and mushrooms are done cooking.
