refreshing summer salad


here is yet another salad recipe for you all fruity salad people out there. i tried this thursday night when we made homemade pizza, and it was a nice accompaniment. the grapefruits provide a tart, fruity twist to go with the mandarin oranges, dried cranberries, and candied pecans. instead of making my own dressing, i opted for a store bought vinaigrette, which was just fine because sometimes, i just do not have the time to make it from scratch!

Roxy's Refreshing Summer Salad

I N G R E D I E N T S :

5 c. fresh baby spinach, washed and dried thoroughly
1/3 c. fresh grapefruit pieces
1/3 c. mandarin oranges
1/2 c. of dried cranberries
1/2 c. lightly candied pecans (here is the recipe i use)
raspberry vinaigrette (she recommends Trader Joe's brand, but since we do not have one here, i used another brand)

D I R E C T I O N S :

-In large bowl, combine spinach, grapefruit, oranges, cranberries, and pecans.
-Lightly drizzle some raspberry vinaigrette on top.
-Toss to combine and serve immediately
