whole wheat banana bread

i love this banana bread recipe and have been making it for a few years now. I love that it uses honey over refined sugar, and whole wheat rather than white flour. Every whole wheat bread I've made has always been overly dense and dry, but not this one! This one is moist and delicious, and you would never believe it's made from 100% whole wheat. Nuts give it a great texture and are a wonderful addition to the flavor. This is a delicious and healthy bread to have for breakfast or a snack.

Again, no time to take a picture...but you know what banana bread looks like!

I have no idea where I got this recipe, but it's a great one.

I N G R E D I E N T S :

1/3 cup canola or vegetable oil
1/2 cup honey
1 tsp. vanilla extract
2 eggs
1 cup mashed banana (3 bananas...don't skimp- make sure it's a whole cup)
1 3/4 cup whole wheat flour
1/2 tsp. salt
1 tsp. baking soda
1/4 cup hot water
1/4-1/2 cup chopped pecans or walnuts

D I R E C T I O N S :

Preheat oven to 325.
Beat oil and honey, then add eggs and mix well.
Stir in bananas, vanilla, flour, and salt.
Add baking soda to hot water; stir to mix, and add to batter.
Blend in chopped nuts.
Cook in bread pan on 325 for 55-60 minutes.

Nancy, I made this a couple days ago & it turned out REALLY good. I liked that it wasn't very sweet tasting. It screamed for nuts & flax seed to me so I added that because I can't imagine banana bread without nuts. Super fluffy.

I also have a little trick I do with baking. Since I keep a containter of Eggbeaters in the fridge, I always add a tiny bit of egg whites to my recipes that call for eggs. I saw that Barefoot Contessa always calls for extra large eggs in her recipes & since I don't buy those & since I don't necessarily think that I want an extra egg yolk, the extra egg white makes my baked goods a little fluffier & moister. Just thought I'd mention it.

Oops! Somehow I forgot to include nuts in the ingredients, because I always add them. Flax seed would be a delicious addition as well-I'll have to try that.

By the way, I went in and added nuts to the ingredients ;). So glad I noticed they were missing.

This was surprising good with whole wheat flour which can sometimes turn out dry. The kids loved it!
