Last night at cooking club, we had this delicious appetizer! It's easy and healthy (except for the chips)!
Black Bean Salsa
From At the Table with Patty Roper
I N G R E D I E N T S :
1 (15-ounce) can black beans, drained and rinsed
1/2 cup frozen corn, thawed
2 small tomatoes, seeded and chopped
3-4 green onions, chopped
Juice of 1 lime
1 clove garlic, pressed
1/2 tsp. creole seasoning
Tortilla chips
D I R E C T I O N S :
Stir together first 7 ingredients. Chill. Serve with tortilla chips.
Yield: 3 cups

I just made this on Friday "for John"... guess who ate almost the entire thing by the end of the weekend?? Yep, it was me. But with Baked Chips, so it's healthy, right?!?
